Pouring Ribbons To Open September 14, 2012

The hotshot cocktail team behind Alchemy Consulting—Toby Maloney, Jason Cott, Troy Sidle and Death & Company vet Joaquín Simó—open a grown-up watering hole determined to outgrow the speakeasy genre this Friday the 14th. Painted blue and green, the airy 88-seat East Village room is lit with white-frosted Art Deco glass shafts and a large arched window spanning the front of the bar. The cocktail menu, laid out as a chart with drinks mapped across categories like "Comforting" and "Refreshing," features originals such as the Tahona Smash, a light mixture of reposado tequila, dry sherry, caramelized pear and Angostura bitters. 225 Ave B between 13th and 14th Sts (917-656-6788).

POURING RIBBONS The men of Alchemy Consulting — Toby Maloney, Jason Cott, Troy Sidle and the former Death & Co. bartender Joaquín Simó — are creating an 88-seat second-floor cocktail den in the East Village (above a liquor store, appropriately). The menu will stay brief, at 15 drinks or so, but change every four to six weeks, reflecting the time of year and whatever the bartenders happen to be working on. The team aims to create an airy, convivial local place with intimate banquettes at the front and bar seating at the back. (September): 225 Avenue B, second floor (East 14th Street), (917) 656-6788.

Details are scant, but here’s what the latest from Alchemy Consulting’s Troy Sidle will not be: “a speakeasy, neo-speakeasy, or any kind of twenties throwback.” Sidle, who has parterned with Death & Co.’s Joaquín Simó and two others, says the 88-seat bar will serve exactingly simple cocktails, and a controlled door means you’ll always get a seat.
